Stewed Apples for a Happy Tummy

If you love apples, but they give you some uncomfortable digestive symptoms like gas or bloating, you will love this recipe. When apples are cooked, they release extra pectin which encourages the growth of healthy gut bacteria and are soothing to the intestinal lining.  Try these alone when your digestive system is irritated. Or, when you need a healthy snack or dessert, have a little bowl of stewed apples with some coconut yogurt and walnuts on top or a teaspoon of almond butter and cinnamon mixed in.  This is a tummy-soothing snack for anyone with digestive challenges like constipation or reflux.

What You Need:

4 to 6 organic apples (I like Gala or Granny Smith)

2 tsp ground cinnamon

handful of organic raisins (approximately 1/2 cup)

Filtered water, just enough to cover about half the height of the apples (usually about 1/2 cup)

How to:

1. Chop the unpeeled apples into small chunks and add to medium saucepan

2. Add remaining ingredients and stir

3. Cook on low heat for about 15 minutes, stirring occasionally.  The apples are done when they can be easily pierced with a fork and the skins are shiny.
