Spiced Chickpeas
This week we talked about beans as a powerhouse of CF nutrition.. But how do you add them to your daily routine? Here’s one of my family’s favorite snacks. This recipe uses taco seasoning, but you can use chili powder, cumin, turmeric, oregano or any other spice you like.
Mexican Spiced Chickpeas
Ingredients:
2 cups of cooked chickpeas (if canned, drain, rinse and pat dry with paper towels)
3 tsp extra virgin olive oil
2 tsp taco seasoning
sea salt and pepper to taste
How To:
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
Making sure the chickpeas are patted dry, add them to a bowl with the remaining ingredients and toss to coat.
Spread chickpeas in a single layer on the baking sheet and roast for approximately 30 minutes, stirring halfway through. If you like them more crunchy, roast longer, checking for your desired crunchiness every few minutes.
Remove from oven and cool slightly. Store in a mason jar and grab a handful when you need a nutritious snack.
