Savoring Summer: Watermelon Quinoa Salad

This Greek-inspired Watermelon Quinoa Salad is the ultimate refreshing summer bowl. It’s simple, delicious and nutritious- all the good things!

Ingredients

  • 1 cup cooked quinoa

  • 3 cups watermelon, cubed

  • 1 pint cherry tomatoes, halved

  • 1 English cucumber, chopped

  • 1/4 cup parsley, chopped

  • 1/4 cup mint, chopped

  • 1 red onion, thinly sliced

  • 1/3 cup kalamata olives, pitted and chopped

  • 1/4 cup olive oil

  • 3 Tbs red wine vinegar

  • 1/4 tsp salt, to taste

  • 1 black pepper, to taste

  • 1/3 cup feta [omit for vegan]

Directions

Prep

  1. Prepare quinoa according to package instructions [1/2 cup dry = 1 cup cooked]. You can also defrost frozen pre-cooked quinoa.

  2. Cube watermelon and halve tomatoes.

  3. Chop cucumber, parsley, and mint.

  4. Slice red onion.

Assemble

  1. Add cooled quinoa, watermelon, tomatoes, cucumber, parsley, mint, onion, and olives to a large bowl and toss to combine.

  2. Drizzle with olive oil and vinegar and toss to coat.

  3. Season with salt and black pepper to taste.

  4. Top with feta, if using, before serving.
